I’m Mon, the founder of Crescent Eagle Coffee. As a first-generation American with years of experience in the specialty coffee world, I was determined to build something meaningful — something that would bring people together.

I spent much of my childhood working alongside my father in his family owned restaurant. From him, I learned more than just the craft of food and service — I learned how to create experiences that bring people together.

Coffee holds a deep place in our culture. Over the years, my love for coffee grew into a passion. I knew I wanted to build something meaningful — something that carried the same warmth, dedication, and sense of community I saw in my father’s business.

That vision gave life to Crescent Eagle Coffee — a mobile coffee cart dedicated to blending rich tradition with modern design. We specialize in handcrafted espresso drinks and signature creations, delivering more than just a beverage. Every cup we serve is a moment of connection.
